Homemade Matcha Pancakes

Nothing says ‘weekend’ like homemade pancakes for breakfast! Our simple pancake recipe will help you prepare this weekend favorite with a healthy twist in less than 20 minutes. We mixed whole-wheat flour together with all-purpose flour to have a softer taste but still get the health benefits. We only used 2 teaspoons of matcha, if you want a more intense green color, use more matcha and increase the amount of sugar. You'll wonder why you never tried this before!

WHAT DO YOU NEED?
INGREDIENTS
(makes 4 servings)
100g whole-wheat flour
100g all-purpose flour
2 tablespoons sugar
1 large egg
300ml milk
4 tablespoons unsalted butter or vegetable oil, melted, plus more for frying pan
1 tablespoon baking powder
2 teaspoons Matcha Moments Premium Grade Matcha
½ teaspoon salt
Optional: Toppings, such as fresh fruits, maple syrup, jams, whipped cream, or chocolate syrup

STEP 1: WHISK IT

In a medium bowl, whisk together milk, butter and egg. Add flour, sugar, baking powder, matcha and salt to the milk mixture; whisk until moistened.

STEP 2: COOK IT

For each pancake, spoon 2 to 3 tablespoons of batter onto frying pan, using the back of the spoon to spread batter into a round form (you should be able to fit 2 to 3 in a large frying pan). Cook until the surface of the pancakes show some bubbles, about 1 to 2 minutes. Flip carefully, and cook until brown.

STEP 3: KEEP THEM WARM AND REPEAT

Transfer pancakes to a baking sheet or platter; cover loosely with aluminum foil, and keep warm in the oven. Continue with more oil and the remaining batter.
